There is nothing more summery than a summer squash fritter. I make them when the squash is prolific, so that means all summer, and always make a big batch so I'll have plenty leftover. These are wonderful hot off the skillet, but equally as good reheated, plus they freeze beautifully. I've been making these for decades and the recipe could not be easier.
